Refermented in the bottle and staying on its lees as opposed to being disgorged, this unusual, intriguing wine has aromas of brewer's yeast, citrus and wild herbs. The linear, bone-dry palate offers ripe peach, lemon zest and bitter almond alongside tangy acidity. It closes on a graphite note.
